Are uploaded documents automatically made public on the web thru the service provider of the preview of the documents (i.e.- pdf files)?
since we would want to make sure our information is for password protected individuals.

No. The only case in which they would be public is if the folder you upload them to has been shared with the public.
By default, the system is closed until you grant permissions to other members or groups.

Sorry I may have missed your point here: the preview of documents (using scribd).
This system is privately accessed and not available to the public.
Lastly, if you wish to turn the preview system off for all documents beneath a given item:
Options -> Change its appearance -> Content : set Preview to Off and Cascade All.
