How can I create a simple to do list. Some items I do not need so much detail like a project.
Just a simple list I can check off.

There are no built in simple Todo items. The advantage of using Tasks is that they will appear in the Tasks widget on your Dashboard.
You could however create a simple database to hold your TODO items (a couple of columns) and then use the workflow feature to quickly and easily move them into another completed TODO database.
If you want to try this, create a simple database (call it TODO for example). Add the columns required to store your TODO information.
Copy and paste this database (call it TODO Complete for example).
Configure a workflow rule on the TODO database to move an item to the TODO Complete database.
